Vegan Tofu Stuffed Spinach Crepes

Roasted Tomato Sauce
Instructions
Crepes
  1. Add all crepe ingredients to a blender and blend it for 5 minutes, or until smooth consistency.
  2. Grease frying pan with olive oil
  3. Pour or scoop a small amount of the batter onto frying pan
  4. Brown on both sides and reserve
Filling
  1. Press tofu for at least 30 minutes to remove liquid
  2. Crumble tofu, add the remaining ingredients, mix it and set it aside
Setting up the crepes
  1. Add the filling to the center of the crepe
  2. Roll crepes up and set them facing down in a greased cooking pan
  3. Pour tomato sauce and vegan cheese to on top
Cooking
  1. Preheat oven to 375 degrees F
  2. Bake in pre-heated oven for 20 minutes or until heated through
